Pancakes with salmon caviar


Pancakes with salmon caviar are a traditional Russian dish popular in the cold months of winter.

Makes 4 servings.
 

Ingredients:   250gr salmon caviar
    250gr buckwheat flour
250gr all purpose wheat flour
1/4 liter milk
0,1 liter cream
4 eggs
1-tablespoon sugar
25-30gr yeast
2 tablespoons butter
salt
vegetable oil
sour cream
4-8 slices smoked salmon

 

Warm half of the milk and dissolve yeast in it. Take a large bowl and pour warmed milk with dissolved yeast into it. Sieve the buckwheat flour into the mixture. Mix well and place into a warm place for some time. When the prepared dough begins to rise mix gently with wooden spoon gradually adding the wheat flour and remaining milk. Mix well and leave in a warm place. Melt the butter and mix egg yolks into it, add sugar and salt. Add the mixture to the dough. Whip the cream and mix with egg whites. Add the mixture to the dough then leave in a warm place for 15-20 minutes. Heat a little oil in a small frying pan and pour in enough batter to make a pancake. Quickly tilt and rotate the frying pan so that the batter coats the bottom of it evenly. Cook the pancake over a moderate heat until the underside has turned slightly brown and the top has set. Carefully turn the pancake over and brown the other side in the same way. Keep pancakes warm until serving. Serve pancakes warm along with caviar, sour cream and slices of smoked salmon.
